Pine Dining is a Summer Chef Cookout Series taking place over eight weekends at the site of the historic Mt. Charleston Lodge. Acclaimed Las Vegas chefs are invited to curate “cookout” weekends for the ultimate mountain dining experience with all proceeds going to the nonprofit of their choice.
As preparations are underway to rebuild and reimagine the beloved Lodge, the Ellis family wants to thank the Las Vegas community for their support and invite them back to enjoy the best of the city’s food and drink amidst the pines.

As one of the most decorated, respected, and charismatic chefs in the world, five-time James Beard Award Winner Todd English has established one of the best-known restaurant brands in the nation, published critically acclaimed cookbooks, produced his own TV show, and enjoyed a staggering number of accolades including Bon Appetit’s Restaurateur of the Year and Nation’s Restaurant News’ Top 50 Tastemakers.
Todd English served as Executive Chef of the Northern Italian restaurant Michela’s in Cambridge, MA before opening his first restaurant, the award-winning Olives, in Charlestown, MA in 1989. Current Olives locations include Atlantis in the Bahamas, Venetian Village at The Ritz Carlton Abu Dhabi and Las Vegas’ Virgin Hotel. Following the success of Olives, he created Figs, a more casual sister restaurant concept with two locations in Boston, one in Laguardia Airport, and two locations in the Middle East. In 2010, Todd opened the European-inspired Todd English Food Hall located at the iconic Plaza Hotel, followed by additional locations in Manila and The Dubai Mall. Todd has since expanded his food hall concept to Las Vegas with The Beast at AREA 15 in 2021.
Todd has recently expanded his work in the hospitality industry by partnering with global entrepreneur, Keith Burkard, for the formation of English Hospitality Group (EHG). In February 2022, EHG launched The English Hotel, the highly anticipated upscale boutique hotel in Las Vegas’ vibrant Arts District, featuring art exhibitions and an exceptionally innovative dining experience with The Pepper Club.

James was born and raised in Las Vegas, where he began his culinary career at Las Vegas High School, earning an internship at the Mirage after his first two years of Basic Training. He has had the privilege of working under great chefs such as Bradley Ogden, Michael Mina, Eric Ripert and Gordon Ramsay. After working with Michael Mina for five years he worked with chef Gordon Ramsay and colleague Andi Van Willigan on both “Kitchen Nightmares” and “Hell’s Kitchen.” James returned to his craft to open Esther’s Kitchen in 2018 and Al Solito Posto in 2021.

Since living in Las Vegas, Chef Justin has kept himself busy and well-rounded in the industry. After working at Comme Ca in both the Cosmopolitan hotel and its West Hollywood location, he took an opportunity to teach at the Art Institute of Las Vegas for five years. In 2015 he started the pop-up series SLO-Boy and his open fire cooking adventures and freelance work took him to various parts of the valley. Justin returned to brick and mortar restaurant work as the opening Chef de Cuisine for Sparrow + Wolf, eventually moving on to be Executive Chef of The Kitchen at Atomic and currently Executive Chef of Main St. Provisions.

For our first collaboration weekend Colin Fukunaga and Robert Magsalin of Fukuburger partner with Dan Coughlin of Le Thai.
Colin Fukunaga and partner Robert “Mags” Magsalin were at the forefront of the burgeoning Las Vegas Valley food truck movement. The idea for a mobile eatery was envisioned over many a Maker’s Mark-and-Coors Light-riddled bender. After deciding that serving balut while dressed as clowns might be too narrow a niche market, the duo decided upon Asian-inspired American fare instead. Fukuburger was unveiled in summer 2010. In 2011 they followed suit with the opening of Fukuburger LA, a brick-and-mortar location bringing a taste of Vegas to Hollywood.
The pair can be seen bickering all over the airwaves with appearances on Eat Street, the Great American Food Truck Race and Chopped.
Dan Coughlin grew up learning Thai cooking from his grandmother and mother—restaurant owner Nikki Bujadham of the King & I (Las Vegas). In 2007 he opened his first restaurant Mix Zone Cafe in the Medical District and experimented with cooking ideas that would end up being Le Thai, which opened in 2011 at the very beginning of the Fremont East restaurant age. In April 2018 Dan opened Le Thai 2 followed by 8 East inside of Circa Resort & Casino in 2020. 8 East features his takes on Pan-Asian dishes inspired by recipes he wrote while traveling to different countries in Asia. Dan is also involved in multiple projects downtown and in the Arts District, including partnerships at 18bin, Park on Fremont, and Vesta Coffee Roasters.

Sam Marvin has always brought a unique blend of culinary classicism and a badass, take no prisoners approach to his singular style of cooking. After earning his stripes in the L.A. cooking scene, Chef Sam brought his unprecedented formula for culinary enterprise and knack for timing and trend to Tivoli Village in Summerlin with Echo & Rig Butcher and Steakhouse.
When chef Sam is not busy creating in the kitchen, he can be seen participating in (and winning) a number of broadcasted cooking competitions including Food Network’s Beat Bobby Flay in 2015.

As Executive Chef & Partner of Brezza and Bar Zazu at Resorts World, in the heart of Las Vegas, Chef Nicole Brisson is at the helm of the kitchens, providing her signature authentic, yet modern coastal Italian cuisine and European tapas to locals and visitors alike. Throughout the years, Chef Brisson has worked alongside some of the country’s highest regarded chefs and restaurant groups, and has been honored with multiple accolades. Most recently, Brezza was named “Restaurant of the Year” by Eater.
Chef Brisson and business partner Jason Rocheleau have yet another concept in the works, AMARI at UnCommons, which will take her back off-Strip, and is slated to debut this winter offering classic Italian dishes and an exciting retail component that is sure to be a hit in the southwest Las Vegas valley.
